Hygiene in commercial kitchens is vitally important Those involved in the food industry will be aware of the importance of hygienic practices in the workplace, including clearing up all spills promptly and washing hands thoroughly before and after handling edible produce.

However, one former restaurant owner in Sussex has been fined for filthy conditions at his Indian eatery, which had to be shut down because of a rat infestation, The Argus reported.

The businessman was handed a £5,000 fine following the decision of environmental health officials to close the outlet with immediate effect last July.

Rat droppings were discovered in the kitchen, in a food store room and in the ceiling of the restaurant because the vermin had been accessing the building through crumbling brickwork.

The restaurant is now under new management.

Meanwhile, employers working on dairy farms might wish to invest in food industry workwear as part of steps to improve workplace hygiene, as the Food Standards Agency is bringing in changes to its inspection practices from tomorrow (July 1st).
